Ingredients
  

  • 1 Avocado, ripe
  • 1/2 cup Greek yogurt, plain
  • 1/4 cup Fresh cilantro, chopped
  • 2 tbsps lime juice
  • 1 Clover Garlic, minced
  • 2 tbsps Olive oil
  • salt and pepper, to taste

Instructions
 

Prepare the ingredients

  • Peel and pit the ripe avocado.
  • Chop the fresh cilantro.
  • Mince the garlic.

Blend the dressing

  • In a blender or food processor, combine the ripe avocado and plain Greek yogurt. Blend until smooth and creamy.
  • Add the chopped cilantro and minced garlic to the blender.
  • Squeeze fresh lime juice into the blender. Start with 2 tablespoons and adjust according to your taste preferences.
  • Drizzle in the olive oil to add a rich and smooth texture to the dressing.
  • Season the dressing with salt and pepper. Blend again until all ingredients are well incorporated.
  • If the dressing is too thick, you can adjust the consistency by adding a little more olive oil or lime juice. Blend until you reach your desired thickness.
  • Taste the dressing and adjust the lime juice, salt, or pepper if needed. Blend briefly after adjustments.
  • For enhanced flavor, you can refrigerate the dressing for about 30 minutes before serving. This also allows the flavors to meld.

Optional

  • Garnish with a sprig of fresh cilantro or a lime wedge before serving.
