There’s just something about a warm bowl of homemade soup during the colder months that instantly makes the house feel cozy. And honestly, this roasted tomato soup for immune health has become one of my favorite soup recipes to make when everyone starts feeling run down or when the weather suddenly turns chilly.

Why Roasting Tomatoes Makes Such a Big Difference
If it’s your first time making roasted tomato soup from scratch, roasting the vegetables first is honestly the secret ingredient.
The roasting process completely changes the flavor of the tomatoes.
Instead of tasting acidic or flat, the roasted tomatoes become sweeter, deeper, and almost slightly smoky. The natural sugars caramelize beautifully at high heat and create the most incredible savory base for this creamy tomato soup.
The roasted garlic cloves also become soft and buttery instead of sharp.
It’s honestly the perfect way to make the best tomato soup at home.
Health Benefits of This Healthy Roasted Tomato Soup
One of the reasons I keep making this tomato basil soup is that the ingredients are genuinely nourishing.
Fresh tomatoes are naturally rich in vitamin C and lycopene, a powerful antioxidant that may support heart health and overall wellness.
Garlic cloves are another ingredient I try to cook with regularly during cold and flu season because they’re known to support the immune system.
The combination of roasted tomatoes, olive oil, fresh basil, and bell pepper creates a healthy roasted tomato soup.
And unlike canned soup recipes, homemade soup gives you complete control over the ingredients and sodium level.
Key Ingredients
Here’s everything you’ll need for this roasted tomato soup recipe.
1. Fresh Tomatoes
Roma tomatoes are my favorite because they’re naturally sweet and less watery, but honestly, any ripe tomatoes or juicy tomatoes work during tomato season.
2. Whole Head of Garlic
Roasting a whole head of garlic gives the soup so much depth and subtle sweetness.
3. Bell Pepper
I love adding red bell pepper because it balances the acidity of the tomatoes while adding even more vitamin C.
4. Red Onion
Roasted red onion adds richness and helps build the soup’s savory base.
5. Coconut Milk or Heavy Cream
You can use either depending on what you have.
Coconut milk keeps it dairy-free, while heavy cream creates an extra creamy soup.
6. Fresh Basil
Fresh basil completely changes the flavor of this tomato basil soup. It adds freshness and brightness right at the end.

Baking sheet or baking tray

How To Make Roasted Tomato Soup for Immune Health
Step 1: Roast the Vegetables
Preheat your oven to 425 degrees F.
Line a baking sheet or baking tray with aluminum foil for easier cleanup.
Spread the Roma tomatoes, red onion, and bell pepper in a single layer on the tray.
Drizzle everything with tablespoons of olive oil and season with black pepper and salt.
Slice the top off the whole head of garlic, drizzle it with olive oil, wrap it in aluminum foil, and place it onto the baking sheet with the vegetables.
Roast everything at high heat for about 40–45 minutes until the roasted vegetables are soft and slightly caramelized.
This is where all the rich flavor develops.
Step 2: Build the Soup Base
Transfer the roasted tomatoes, roasted garlic, onion, and bell pepper into a soup pot over medium heat.
Stir in the tomato paste and let it cook for about 2 minutes to deepen the flavor even more.
Then pour in your vegetable broth, vegetable stock, chicken broth, or chicken stock.
Add balsamic vinegar and red pepper flakes.
Let everything simmer together for about 15 minutes.
Your kitchen is going to smell amazing at this point.
Step 3: Blend Until Creamy
Remove the soup from the heat.
Use an immersion blender or hand blender to blend the soup until smooth and creamy.
If using a food processor, carefully transfer the soup in batches.
Stir in coconut milk or heavy cream along with the fresh basil.
Taste and adjust seasoning if needed.
The result is the most creamy tomato soup with deep roasted flavor and natural sweetness.
Tips For The Best Tomato Soup
Use Ripe Tomatoes
The more ripe tomatoes and juicy tomatoes you use, the better the soup will taste.
Roast Everything Well
Don’t rush the roasting process.
Those roasted tomatoes and garlic cloves need enough time to caramelize properly.
Balance The Acidity
If your tomatoes taste extra acidic, adding coconut milk or heavy cream helps mellow everything beautifully.
You can also add a tiny drizzle of honey if needed.
Fresh Basil Matters
Fresh basil added at the end keeps the soup bright and fresh.
My Favorite Way To Serve This Delicious Soup
