Traditional Gluten-Free Corned Beef and Cabbage Recipe

This gluten free corned beef and cabbage is a cozy, traditional St. Patrick’s Day dinner made with tender corned beef brisket, cabbage wedges, potatoes, and carrots simmered low and slow until fork-tender. It’s a hearty one-pot meal that’s naturally gluten free, easy to make, and perfect for feeding a family.

Ingredients
  

  • 3-4 lbs corned beef brisket (preferably with spice packet)
  • 1 tsp mustard seeds, 1–2 bay leaves, whole cloves (optional homemade spice blend)
  • 1 medium onion, peeled and quartered
  • 3 carrots, peeled and cut into large chunks
  • 1-1.5 lbs potatoes (about 4–5 medium)
  • 1 small cabbage, cut into wedges
  • 6-8 cups water or beef broth
  • salt and pepper (to taste)
  • Gluten-free Mustard (to taste)

Instructions
 

  • Rinse the brisket. Rinse the corned beef brisket under cold water (and trim excess fat if you want), then place it in a large pot or Dutch oven.
  • Add seasonings + liquid. Sprinkle in the spice packet (or add bay leaves, mustard seeds, and black pepper), add the quartered onion and optional garlic, then pour in enough water or beef broth to cover the brisket by about 1 inch.
  • Bring to a boil. Set to high heat and bring the pot to a boil.
  • Simmer low and slow. Reduce to low heat, cover, and simmer for 2.5–3.5 hours (about 45–50 minutes per pound), skimming off any foam with a slotted spoon, until the meat is fork-tender.
  • Add carrots + potatoes. Add the carrots and potatoes, cover, and simmer for 15–20 minutes until mostly tender.
  • Add cabbage last. Place the cabbage wedges on top of the vegetables, cover, and cook 12–15 minutes more (just until tender, not mushy).
  • Rest the meat. Transfer the brisket to a cutting board, cover loosely with a clean kitchen towel, and let it rest 10 minutes.
  • Slice and serve. Slice the corned beef against the grain, arrange on a serving platter with the vegetables, and serve with gluten-free mustard (and salt/pepper to taste).

Notes

  • Rinse the brisket first. I always rinse mine under cold water to remove excess brine so the finished dish isn’t overly salty. It makes a big difference.
  • Check your spice packet. Most are gluten-free, but I still double-check labels just to be safe, especially if you’re cooking for someone with sensitivities.
  • Slice against the grain. This keeps the corned beef tender instead of chewy. If you slice it the wrong way, it can feel tough even when fully cooked.
  • Add cabbage last. Cabbage cooks fast. I usually add mine during the last 15 minutes so it stays tender but not mushy.
  • Use broth for extra flavor. Water works perfectly fine, but beef broth gives the cooking liquid a richer taste.
  • Don’t rush the cook time. Low and slow is what makes corned beef fork-tender. If it feels tough, it probably just needs more time.
  • Save the cooking liquid. I store leftovers in a little broth so the meat stays juicy, great for next-day beef hash or sandwiches.
  • Leftovers reheat beautifully. Sometimes I think this meal tastes even better the next day, once all the flavors sit together overnight.
