- 2 tbsp apple cider vinegar
- 1 tbsp lemon juice
- 1 tsp Dijon mustard

Cover and refrigerate for at least 30 minutes to allow the flavors to blend.
Stir before serving. Toss with shredded cabbage and carrots immediately before serving.
For coleslaw: For 6–8 cups of shredded cabbage and carrots, start with about ¾ cup of dressing. Toss well and add more dressing as needed.
Vinegar: White vinegar can be substituted for apple cider vinegar for a slightly sharper flavor.
Storage: Store leftover dressing in an airtight container in the refrigerator for about 4–5 days. Stir well before using.
Make ahead: The dressing tastes even better after it has had some time to chill, so you can make it several hours before serving.
