Ingredients
  

  • 2 cups shredded chicken (cooked chicken breasts or rotisserie chicken)
  • 3/4 cup plain Greek yogurt (nonfat Greek yogurt works well)
  • 1/2 cup fat-free cottage cheese blended until smooth
  • 4 oz low-fat cream cheese softened to room temperature
  • 1/2 cup shredded low-fat cheese (cheddar, mozzarella, or pepper jack)
  • 1/3 cup Frank’s buffalo sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 2 green onions sliced
  • Celery sticks, carrot sticks, tortilla chips, or pita chips optional toppings

Instructions
 

  • Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  • Blend the creamy base by combining Greek yogurt, blended cottage cheese, and cream cheese in a food processor until smooth.
  • Season the mixture with buffalo sauce, garlic powder, onion powder, and black pepper. Blend again until fully combined.
  • Add the chicken and cheese to a large bowl, then pour in the buffalo mixture. Stir until evenly coated.
  • Transfer to the baking dish and spread into an even layer.
  • Bake for 20–25 minutes, or until hot and bubbly around the edges.
  • Remove from the oven and top with sliced green onions. Serve warm with your favorite dippers.

Notes

  • For the creamiest texture, make sure the cream cheese is at room temperature before blending.
  • Rotisserie chicken works great and saves time, but any cooked, shredded chicken can be used.
  • Adjust the heat level by adding more or less buffalo sauce to taste.
  • This dip can be made ahead and stored in an airtight container in the refrigerator for up to 4 days.
  • Reheat gently in the microwave or oven until warmed through, stirring if needed.
  • Make-ahead: Mix the dip up to 24 hours in advance and bake just before serving.
